Ingredients for salmon under cold marinade

700 - 800 g. salmon steaks thickness of about 3 cm
1 tsp sea salt
freshly ground white pepper
juice of 1 large lemon
a little vegetable oil for frying
For the marinade:
2 oranges
7, see the white part of leeks average diameter
2 cloves garlic
1 Bulgarian red pepper
bunch of dill
50 ml. olive oil
50 ml. dry white wine
50 ml. red wine vinegar
0.5 tsp honey
0.5 tsp Vusterovskogo sauce (optional)
1 tsp sea salt
freshly ground white pepper

Preparation of salmon under cold marinade

The fish are cleaned of scales, pour lemon juice and leave the pickled for 10 minutes.
Prepare the marinade.
Squeeze juice from oranges, grate the orange zest, finely chop the garlic and dill. Bulgarian pepper and leeks cut into fine strips. Mix all marinade ingredients.
The fish is soaked from the lemon juice. Add black pepper. Fry in hot pan, greased on both sides.
Roasted steaks lay in a large bowl. Sprinkle salt on both sides. Cover with cold marinade, cover with cling film and allow to cool to room temperature. Then you can remove, or in the refrigerator for 12-48 hours. Or leave the table pickled 4-5 hours at room temperature (but not above 25 C).
Serve cold.
