Marinated eggplant - recipe

Ingredients for pickled eggplant

1 kg aubergines
1 clove garlic
bunch of dill
2 / 3 cup vegetable oil
For the marinade:
2 liters of water
200 ml of 9% vinegar
2 tablespoons salt

Preparation pickled eggplant


Eggplant cut into cubes with sides about 2 cm
Marinade bring to a boil, lower the eggplant in it again, bring to a boil and cook for 5 minutes.
Eggplant reject the drain and wait until cool down.
Garlic and chop the dill.
Eggplant mixed with garlic, dill, and vegetable oil.
Store in refrigerator.
